ABOUT THIS WINE
Guimaro Mencia is a red wine from the D.O. Ribeira Sacra in Galicia, Spain. Produced by Bodegas Guimaro, it is primarily crafted from the Mencia grape, complemented by a blend of other local red varieties such as Caiño, Sousón, Merenzao, Brancellao, Garnacha, Mouratón, and Negreda. The winery embodies the 'colleteiro' tradition, with winemaker Pedro Rodríguez focusing on expressing the unique terroir of Ribeira Sacra through minimal intervention. The region's dramatic, terraced vineyards, known as 'heroic viticulture,' contribute to the distinct character of the wines.

WINE MAKING PROCESS
Guimaro Mencia is produced using grapes from vines averaging 35-40 years old, grown on steep, terraced slopes. The grapes are hand-harvested. Fermentation takes place in stainless steel tanks, often utilizing indigenous yeasts and sometimes employing whole-cluster fermentation. A brief cold maceration is part of the process. The wine is then aged for 6-8 months on its lees in stainless steel tanks, a technique that helps maintain freshness and primary fruit characteristics.
