WINE MAKING PROCESS
The winemaking process for Gurrieri Don Vicé Cerasuolo Classico begins with a 48-hour pre-fermentation maceration, followed by alcoholic fermentation at 22-26°C for 20 days on the skins. Malolactic fermentation is fully carried out. The wine is then aged for 18 months, with a portion maturing in tonneau and the remainder in stainless steel. Following this, it undergoes at least 12 months of bottle refinement. The grapes are sourced from vineyards managed using ecosustainable and organic cultivation methods, and are hand-harvested in two stages to manage ripening.
