WINE MAKING PROCESS
The winemaking process for Gurrieri Don Vicé Cerasuolo di Vittoria Classico begins with a 48-hour pre-fermentation maceration. Alcoholic fermentation takes place in stainless steel tanks at controlled temperatures (22-26°C) using native yeasts, with a subsequent 20-day maceration on the skins. Malolactic fermentation is fully completed. The wine is then aged for 18 months, partly in tonneaux and partly in steel. Following this, it undergoes at least 12 months of bottle refinement before release.
