WINE MAKING PROCESS
The production of Gustave Lorentz Pinot Noir La Limite involves destemming the hand-selected Pinot Noir grapes, followed by a five-day cold pre-fermentation maceration. Alcoholic fermentation is conducted with thermoregulation and extended maceration. Following fermentation, the wine is aged for 13 months in new oak barrels, specifically 'Grande Réserve' or medium-toast Burgundy barrels. The aim of this aging process is to soften the tannins and achieve integration without imparting excessive oak character.
