WINE MAKING PROCESS
The Haggan Xinomavro undergoes alcoholic fermentation in stainless steel tanks at controlled temperatures (16-18°C) for 12-15 days, often utilizing indigenous yeasts. Maceration periods can range from 18 to 25 days. Following fermentation, the wine is aged in used oak barrels, with maturation times varying from 4 to 12 months in 500-liter barrels, or 6 months in used French oak.
