WINE MAKING PROCESS
The grapes for the Marimist Chardonnay are sourced from vines planted between 2007 and 2010 on ancient decomposed granite loam soils with quartzite inclusions. The fruit, consisting of clones CY76D, CY3, CY95C, and CY96A, is hand-harvested in the cool early morning. Following gentle pressing, the juice undergoes fermentation in French oak barrels using minimalist intervention principles. The wine is aged in French oak barrels to integrate the wood components seamlessly, enhancing the texture and complexity while maintaining the vibrant, site-specific mineral tension.
