ABOUT THIS WINE
The Héritage Du Conseiller Pinot Noir by Bouchard Aîné & Fils is a tribute to the historical contributions of Paul Bouchard, a significant figure in the winery's development and the broader French wine industry. Founded in 1750, Bouchard Aîné & Fils selects grapes from diverse cool-climate terroirs across France, specifically from vineyards with clay-limestone soils known for their wide temperature fluctuations. This approach aims to capture the essence of Pinot Noir while honoring the legacy of the 'Grand Conseiller,' who championed quality and innovation, including establishing the Viticultural School of Beaune.

WINE MAKING PROCESS
The production of Héritage Du Conseiller Pinot Noir begins with a four-day cold maceration to enhance color. Each vineyard parcel is vinified separately to preserve its unique identity. A long fermentation of at least three weeks is followed by a seven-day hot maceration to refine tannins. The wine then rests for four months on fine lees. Aging involves a blend of oak (25%) for subtle complexity and stainless steel (75%) to maintain fruit freshness and varietal expression.
