WINE MAKING PROCESS
The winemaking process for this Hermitage Cuvée Émilie Rouge begins with manual harvesting. The grapes undergo total destemming before traditional vinification in concrete and stainless steel tanks, utilizing punch-downs and pump-overs with temperature control. Maceration lasts for 28 to 30 days. Following fermentation, the wine is aged for 15 to 18 months in 100% new French oak barrels. The domaine adheres to sustainable farming practices, holding Haute Valeur Environnementale (HVE) certification.
