WINE MAKING PROCESS
The Gurrieri HIC XXII Brut Spumante is produced using the Metodo Classico, or Traditional Method. This involves a primary fermentation followed by a secondary fermentation directly in the bottle, which creates the wine's effervescence. The grapes, Nero d'Avola and Frappato, are vinified in white, meaning their skins are removed before fermentation to achieve a pale color. Following bottle fermentation, the wine undergoes an extended aging period on its lees for at least 36 months. This process is crucial for developing the wine's complexity, fine bubbles, and characteristic bready aromas. The producer, Azienda Agricola Battaglia Graziella, is committed to organic farming practices, integrating sustainability into their winemaking philosophy.
