ABOUT THIS WINE
Domaine de l'Octavin was founded in Arbois, Jura, in 2005 by Alice Bouvot and Charles Dagand. Since 2015, Alice has run the estate entirely on her own. The 'Hip Hip Jura' range represents her creative négoce project, established to counter severe crop losses from late-spring frosts in the region. For these wines, Alice partners with trusted organic and biodynamic grower friends in Jura, harvesting the grapes herself and transporting them back to her Arbois cellar. Known for her artistic approach, Alice is a trained classical cellist who views winemaking as a musical interpretation of terroir, translating harmony and rhythm into living, additive-free wines.

WINE MAKING PROCESS
This wine is crafted under a strict 'pur jus' philosophy with zero additives at any stage of the process. The Poulsard grapes are harvested entirely by hand and brought back to the Arbois cellar. Vinification involves 10 days of whole-cluster and partially hand-destemmed maceration. Fermentation occurs spontaneously using only indigenous yeasts, with no temperature control. The wine is aged entirely in stainless steel tanks to preserve its fresh, vibrant fruit character. It is bottled without fining, filtration, or any added sulfites, resulting in a pure, living expression of the grape.
