WINE MAKING PROCESS
The winemaking process for Hipgnosis involves rapid pressing after partial destemming and crushing, followed by a 24-hour cold stabilization. Fermentation is initiated in stainless steel tanks and then transferred to barrels, with daily stirring employed. The wine undergoes 12 months of aging in a mix of new and one-year-old barrels with medium toast. Malolactic fermentation is intentionally avoided to preserve the wine's tension and freshness.
