WINE MAKING PROCESS
The production of Hirotogawa Tokubetsu Junmai begins with polished rice, which undergoes a meticulous three-stage fermentation process. This fermentation is conducted at a controlled low temperature, approximately 10 degrees Celsius, over an extended period. Following fermentation, the sake has an initial alcohol content of 20% ABV and is then diluted to a final range of 14-16% ABV. The 'Tokubetsu' designation implies that special production methods or a slightly different rice milling rate were employed compared to a standard Junmai.
