WINE MAKING PROCESS
The Terroir al Limit Historic Negre 2021 is produced using biodynamic and organic viticulture practices, with grapes harvested by hand. Fermentation is spontaneous, utilizing native yeasts and often whole clusters. Maceration is kept brief, around 10 days, with a focus on gentle extraction. Following fermentation, the wine undergoes a 6-month aging period in neutral stainless steel tanks or concrete vats. This winemaking approach is designed to preserve the purity of the fruit and express the unique characteristics of the Priorat terroir without the influence of oak.
