WINE MAKING PROCESS
The Holm Oak Pinot Noir 2019 is crafted from multiple Pinot Noir clones sourced from various blocks on the estate vineyard. Fermentation typically involves wild yeasts in small, open-top fermenters, with hand plunging performed up to four times daily. A portion of whole bunch fermented fruit is often included to enhance perfume, structure, and complexity. Following fermentation, the wine is matured in French oak for 10 to 15 months, with approximately 25% new oak used. The 2019 vintage benefited from mild, dry conditions in Tasmania, leading to ripe and concentrated fruit.
