WINE MAKING PROCESS
The Homare Karahashi Junmai Ginjo is produced using 100% Yamada Nishiki rice, a premium sake rice varietal. The brewing process utilizes ultra-soft water sourced from 100 meters below ground, known as 'Kitano Homyo Mizu.' Following pressing, the sake is promptly bottled and stored raw to allow its flavors to mature. It is then rapidly chilled to -5°C in a refrigerated chamber. The entire production is conducted under meticulous supervision and stringent control, reflecting the brewery's commitment to quality.
