WINE MAKING PROCESS
The winemaking process for the Humo Blanco Edition Limitada Cabernet Sauvignon 2020 begins with chilling the grapes in a refrigerated room followed by gentle crushing. Maceration on the skins lasts for 35 days, with fermentation occurring in vats and regular pumping over. Fifteen percent of the grapes were left whole to aid in draining the wine. The wine then undergoes aging for ten months in French oak barrels, including malolactic fermentation in barrel. During a three-month period, regular stirring is employed.
