WINE MAKING PROCESS
The 2023 Humo Blanco Edition Limitada Chardonnay is produced from 100% Chardonnay grapes grown in the Lolol Valley. Following a manual harvest in the early morning, the grapes undergo gentle pressing. Fermentation takes place in stainless steel tanks at controlled temperatures between 16-18°C, with the potential for malolactic fermentation to add complexity. The wine is aged on its lees for 1.5 to 2 months in tank. Additionally, 25% of the wine is matured for 3 months in second-use French oak barrels. The winery practices organic and biodynamic viticulture.
