WINE MAKING PROCESS
The Ijalba Maturana Blanco 2021 is produced using 100% Maturana Blanca grapes. Fermentation occurs in concrete vats, a technique chosen to preserve the grape's inherent characteristics. Following fermentation, the wine is aged for three months on its lees, a process that enhances its texture and complexity. A small portion of the wine may see aging in barriques, contributing subtle nuances. Viña Ijalba employs certified organic farming practices across its 90 hectares of vineyards, many of which are situated on land reclaimed from former mining and gravel operations. The winery is also dedicated to research and the preservation of indigenous Rioja grape varieties.
