WINE MAKING PROCESS
Champagne Baron Dauvergne's Œil de Perdrix is produced using grapes from old vines in Bouzy. The winemaking process begins with whole bunch pressing, followed by alcoholic fermentation at 18°C. Malolactic fermentation is carried out in temperature-controlled stainless-steel vats. The wine then undergoes aging in traditional cellars, with a notable period spent on its lees for up to three years before disgorgement. The dosage is typically around 7g/L of sugar.
