WINE MAKING PROCESS
The winemaking process for Il Nespoli Romagna Sangiovese Superiore Riserva begins with the harvest of Sangiovese grapes in late September to mid-October. Fermentation takes place at controlled temperatures (25-26°C) with techniques like pump-overs and délestage used to maximize the extraction of color and aroma. Malolactic fermentation follows. The wine is then aged for at least 12 months in stainless steel vats, followed by a minimum of 6 months of bottle aging. Poderi dal Nespoli is committed to sustainable farming practices and minimizing environmental impact throughout their production.
