ABOUT THIS WINE
San Fereolo, led by Nicoletta Bocca since 1992, is located in Dogliani, Piedmont. Nicoletta, who moved from Milan with no formal winemaking training, learned her craft from local growers and adopted a low-interventionist, biodynamic approach. The name 'Il Provinciale' (The Provincial) serves as a dual tribute: first, to her father Giorgio Bocca, a celebrated Italian journalist and wartime partisan who wrote a famous memoir of the same name; and second, to Nebbiolo itself, which is a rare newcomer in Dogliani, a region historically dominated by Dolcetto. Nicoletta crafts this wine with a traditional, age-worthy philosophy reminiscent of classic old-school Barolo.

WINE MAKING PROCESS
The wine is sourced from two distinct limestone-rich sites: the estate's Austri vineyard in Dogliani and the high-elevation Montagliato vineyard in Monforte d'Alba, situated at 400 meters above sea level. Sourced from Demeter-certified biodynamic and organic vineyards, the grapes are manually harvested. Spontaneous fermentation takes place in large wooden vats (tini di legno) using only indigenous yeasts, without temperature control. The wine undergoes an extended skin maceration of approximately 30 days to extract structured tannins. It is aged for 24 months in traditional large Slavonian oak casks (botte grande) and bottled unfined and unfiltered.
