WINE MAKING PROCESS
The grapes are sustainably farmed and hand-harvested from Nervi's historic estate vineyards, including Molsino and Valferana. To preserve high natural acidity, the fruit is picked one to two weeks earlier than the grapes destined for the red Gattinara. After gentle destemming, the grapes undergo a brief skin-contact maceration of approximately eight hours to extract its delicate pink hue. Fermentation takes place slowly at cool temperatures in stainless steel tanks, followed by natural malolactic fermentation in concrete vats. The wine is then aged on its fine lees for four to six months before bottling.
