WINE MAKING PROCESS
The winemaking process for 'In Love With A Memory' begins with destemmed Sauvignon Blanc grapes, which undergo a skin maceration period of just over a week. Following this, the juice is pressed before fermentation naturally commences. The fermentation itself is notably slow, taking place in a tank. After this extended fermentation, the wine is transferred to barrels where it ages for a full year. Adhering to Stagiaire Wine's philosophy, the wine is produced with minimal intervention, meaning nothing is added or removed, and no sulfur is used throughout the process.
