WINE MAKING PROCESS
The winemaking process for Incanto Valtellina Superiore Sassella begins with manual harvesting in late October. Natural red vinification follows, with maceration on the skins lasting at least 30 days, utilizing pumping over and délestage for extraction. Fermentation relies solely on indigenous yeasts. The wine then undergoes aging for a minimum of 14 months in 25 hl Slavonian oak barrels, followed by a minimum of 8 months of bottle refinement in darkness. The winery emphasizes natural farming and detailed soil analysis.
