WINE MAKING PROCESS
The winemaking process for the Indomita Gran Reserva Chardonnay Riesling begins with hand-harvesting the grapes early in the morning. The grapes are then crushed and undergo a six to eight-hour maceration with their skins at low temperatures. Fermentation is carried out in stainless steel tanks, with temperatures carefully controlled between 15-16°C to preserve aromatics. Following fermentation, the wine is aged on its lees, a technique that contributes to its texture and complexity.
