WINE MAKING PROCESS
The Kaiken Indómito Cabernet Franc 2020 is produced from hand-harvested grapes selected manually at the winery. Fermentation takes place in concrete tanks at 27°C using selected and native yeasts. The wine undergoes pre-fermentation maceration for 4 days and post-fermentation maceration for 20 days. Malolactic fermentation occurs naturally in concrete tanks. Aging consists of 10 months, with 80% of the wine in concrete tanks and 20% in second-use French oak barrels, followed by 4 months of bottle aging before release.
