WINE MAKING PROCESS
The Kaiken Indómito Malbec 2021 begins with a 4-day pre-fermentation maceration in stainless steel at 10°C. Fermentation occurs in concrete vats for 7 days at 27°C, utilizing wild yeasts. A post-fermentation maceration follows for 20 days, and spontaneous malolactic fermentation takes place in concrete vats. The wine is then aged for 8 months in second-use French oak barrels, followed by 4 months of bottle aging before release. The grapes are manually harvested from vineyards located at an altitude of 1,200 meters in the Uco Valley.
