WINE MAKING PROCESS
The Inopia Côtes du Rhône Villages Blanc is crafted using a distinctive winemaking approach. The grapes are fermented slowly and gently on their lees. A key technique employed is the hyper-oxidation of the juice, which is unusual for white wines and aims to build structure. The wine then undergoes extended aging for approximately 16 months on its lees, with some batches also experiencing malolactic fermentation. Aging also takes place in 500-liter barrels and cement eggs. Vineyard management emphasizes improving drainage and the use of organic manures to achieve lower yields.
