WINE MAKING PROCESS
The winemaking process for Inopia Côtes du Rhône Villages Blanc begins with hand-harvested grapes. The grapes undergo hard pressing in small, old presses. The must is then macerated in tanks at cool temperatures for approximately 8 days, followed by an undisturbed fermentation for 10 days in tanks. Following fermentation, the wine is aged for 16 months on its lees, utilizing both 500-liter barrels and cement eggs. The winemaking philosophy of Rotem & Mounir Saouma centers on respecting nature and allowing the terroir to express itself.
