WINE MAKING PROCESS
The Inopia Côtes du Rhône Villages Rouge 2020 is produced using a philosophy of minimal intervention. Grapes are firmly pressed and macerated in tanks at cool temperatures for eight days, followed by a 10-day fermentation. The wine is aged for 18 months on lees in 500-liter casks, foudres, and concrete eggs. A light sulfur addition is made only a month before bottling. The wine is bottled without fining or filtering, reflecting the Saoumas' commitment to preserving the wine's natural character and terroir expression.
