WINE MAKING PROCESS
The 2018 Irrévérence is a white blend from Pearl Morissette Estate Winery. The winemaking involved distinct processes for each grape. Chardonnay was fermented and aged in foudres. Riesling was fermented in foudre and stainless steel. A portion of the Gewürztraminer was co-fermented with Riesling on skins in qvevri for six months, while the rest, including botrytized grapes, fermented dry in a foudre. All wines aged separately on primary lees for 12 months, followed by an additional 12 months of aging in concrete and foudres after blending. The wine was bottled unfined and unfiltered in early fall 2020.
