ABOUT THIS WINE
Ja Toch by Jan van Roekel is a vibrant natural wine, marking a triumphant return with its 2025 vintage after a multi-year hiatus caused by devastating hail damage to the grape harvests. This unique project is the brainchild of Jan van Roekel, a small-scale Dutch winemaker who has been crafting natural wines since 2014. He operates from the barn of fellow winemaker Romain des Grottes in Beaujolais, embodying a philosophy of adapting to each vintage's characteristics rather than adhering to a rigid recipe. The wine is a distinctive blend, sourcing Gamay grapes from Beaujolais and Chardonnay from Limoux, both renowned French regions. This blend of red and white grapes from different terroirs results in a light, fresh, and highly drinkable 'vin de soif' that perfectly encapsulates the modern natural wine movement.

WINE MAKING PROCESS
The winemaking for Ja Toch is described as "completely natural," with a focus on minimal intervention and adapting to the grapes of each vintage. The grapes are sourced from organic vineyards; Gamay from Romain des Grottes in Beaujolais and Chardonnay from Genevieve and Patrick in Limoux. For the red Gamay component, a short maceration is performed with whole bunches, extracting delicate color and fruit characteristics. The white Chardonnay grapes are direct-pressed, ensuring freshness and purity. Following these individual processes, the two components are blended. The wine is then bottled in October, without the addition of sulfites, preserving its natural vitality and expression.
