ABOUT THIS WINE
Apostolos Thymiopoulos is widely recognized as one of Greece's most revolutionary winemakers, celebrated for redefining the native red grape variety, Xinomavro. Based in the Naoussa region of Macedonia, Thymiopoulos practices biodynamic viticulture with a deep respect for the local terroir. The 'Jeunes Vignes' (Young Vines) bottling is crafted to showcase a fresher, more approachable, and fruit-forward side of Xinomavro, contrasting with the traditionally highly tannic and austere styles of the region. By sourcing from younger parcels, Thymiopoulos delivers a vibrant, modern Greek red that has captured the attention of natural wine enthusiasts worldwide.

WINE MAKING PROCESS
The grapes for Jeunes Vignes are hand-harvested from biodynamically farmed vineyards in the Trilofos and Fitia sub-regions of Naoussa. The fruit is 100% destemmed and undergoes fermentation with indigenous yeasts in temperature-controlled stainless steel tanks to preserve the bright primary fruit characteristics. Maceration lasts for approximately 12 to 15 days. Crucially, this wine is aged entirely in concrete vats and stainless steel tanks rather than oak barrels, ensuring the pure, unadorned expression of the Xinomavro grape. It is bottled with minimal fining, filtration, and very low sulfur additions.
