WINE MAKING PROCESS
Grapes from each of the six California regions were harvested, sorted, and destemmed separately upon arrival at the winery. Fermentation took place in individual, temperature-controlled lots, primarily in stainless steel tanks, to preserve the unique characteristics of each vineyard source. The wine was then aged for 18 months in oak barrels, utilizing 25% new American oak. Individual barrels were carefully assessed for tannin development before the final blend was assembled.
