WINE MAKING PROCESS
The Fio 'JOJO Orange' 2022 is produced using 100% Riesling grapes from the Mosel region. The winemaking process emphasizes minimal intervention, beginning with hand-harvested grapes from low-yield vines grown on steep slopes. The grapes undergo spontaneous fermentation with wild yeasts, a technique that allows for natural expression of the fruit and terroir. This fermentation occurs on the skins, classifying it as an orange wine, and takes place in a combination of used wooden barrels and stainless steel tanks. Following fermentation, the wine is aged in similar vessels, with some mention of traditional Fuder barrels and extended lees contact. The wine is bottled unfiltered with minimal sulfur added before bottling.
