WINE MAKING PROCESS
The Jonty's Ducks Pekin White is produced using a blend of Chenin Blanc, Roussanne, Muscat, Semillon, and Viognier. Grapes are harvested as whole bunches and fermented separately. Fermentation takes place in steel tanks, with a portion also occurring in used 600-liter oak barrels, utilizing natural yeasts. The wine is aged on its lees for a minimum of six months with regular batonnage. Winemaking employs low sulfur levels and minimal intervention. The estate practices organic and biodynamic farming, integrating natural pest control methods such as the use of Pekin ducks.
