WINE MAKING PROCESS
The winemaking process for Josephine involves manual harvesting of Rösler and Blaufränkisch grapes. A significant portion of the grapes are directly pressed, with fermentation occurring in 500-liter barrels. Another part of the harvest is fermented on skins in wooden vats for two weeks before being blended. The wine is vinified without additives and undergoes aging for 18 months in old 500-liter and 1500-liter oak barrels. Indigenous yeasts are used for fermentation, and the entire process adheres to biodynamic principles.
