WINE MAKING PROCESS
The Juno Shiraz grapes are sourced from the Coastal Region and are handpicked. The vinification process involves de-stalking and light crushing, followed by a 24-hour cold soak. Fermentation is carried out with selected yeast strains at temperatures below 26°C, with regular pump-overs for color extraction. Malolactic fermentation is completed in stainless steel tanks. The wine is then matured for 6 months with French oak staves in stainless steel tanks.
