WINE MAKING PROCESS
The Simonsig Kaapse Vonkel Brut 2023 is produced using the Méthode Cap Classique. Grapes are hand-harvested and gently pressed. Primary fermentation takes place in stainless steel tanks at controlled temperatures, with a portion of Chardonnay fermented in older French oak barrels. Malolactic fermentation is avoided to maintain freshness. The wine undergoes secondary fermentation in the bottle and ages on its lees for at least 15 months before disgorgement. The residual sugar is 3.2 g/l, and total acidity is 7.8 g/l at a pH of 3.2.
