WINE MAKING PROCESS
Christoph Hoch Kalkspitz NV is produced using the Pétillant Naturel (Pet-Nat) method. Primary fermentation takes place spontaneously in used oak barrels. The wine undergoes a second fermentation in the bottle, often with the addition of fresh grape must, to create its effervescence. Minimal intervention is a core principle, with the wine typically being unfiltered and having no added sulfites. Aging occurs in used wooden barrels. Grapes are hand-picked in mid to late August. The winemaking approach emphasizes biodynamic farming and expressing the unique terroir of the Kremstal region.
