Katamacerato is produced by Azienda Agricola Elios, a winery founded in Western Sicily in 2015 by friends Nicola Adamo and Guido Parrinello. After leaving corporate consulting careers, they returned to their families' historic farmlands to rescue them from industrial cooperatives that historically bought grapes for cheap, generic bulk blends. Elios aims to restore dignity to native Sicilian varieties through low-intervention farming. The name Katamacerato is a playful fusion of 'Katana' (the Japanese samurai sword) and 'Macerato' (the Italian term for skin maceration), symbolizing a sharp, rebellious break from the industrial past of stripping Catarratto of its natural identity.

WINE MAKING PROCESS
This orange wine is crafted from 100% Catarratto grapes grown at an altitude of 650 meters on calcareous white marl soils. The grapes are hand-harvested in mid-to-late September. Vinification is highly natural, featuring spontaneous fermentation with indigenous yeasts in temperature-controlled stainless steel vessels. The key to its character is a 7-day extended skin-contact maceration with the fermenting must. The wine is aged for 7 to 8 months in stainless steel tanks to preserve varietal purity, followed by bottle refinement. It is bottled unfiltered and unfined with minimal added sulfur dioxide.
