WINE MAKING PROCESS
The winemaking process begins with hand-harvested grapes, which are cooled and then manually sorted, destemmed, and gently crushed. The winery's three-level design facilitates gravity-flow movement of grapes and wine. Alcoholic fermentation takes place in stainless steel tanks, involving maceration with skins, followed by post-fermentation maceration. Malolactic fermentation occurs in French oak barrels. The wine is then aged in 225-liter French oak barrels, with a focus on integrating oak elegantly. Finally, the wine is aged further in a subterranean tunnel before release.
