WINE MAKING PROCESS
The Kershaw Wines Clonal Selection Syrah 2021 is produced from Syrah grapes sourced from five distinct vineyard parcels in the Elgin Valley. The winemaking process begins with destemmed grapes fermented spontaneously in small, open-top fermenters using wild yeasts. Following a maceration period of 20 to 26 days, the wine undergoes malolactic conversion in barrel after being racked by gravity. Maturation takes place over 17 months in French oak, utilizing a combination of new and used barriques and larger casks, as well as concrete eggs, to refine the wine's structure and complexity.
