Kilt Vin de Liqueur is produced by Domaine Les Bottes Rouges using 100% Chardonnay grapes from vines approximately 60 years old. The winemaking process begins with hand-harvested, late-harvest grapes. A key technique is 'mutage,' where two-thirds Chardonnay grape must is blended with one-third Eau de Vie de Marc (grape brandy) to halt fermentation and retain natural sweetness, creating a fortified wine in the style of Macvin du Jura. Native yeasts are used for any initial fermentation. The wine is then aged for one year, primarily in stainless steel tanks or older barrels, to develop complexity without heaviness.
