WINE MAKING PROCESS
The Kir-Yianni Naoussa Xinomavro Cuvée Villages begins with a 6-day cold soak to extract color and aromatics. Fermentation occurs in stainless steel tanks at 20-23°C for 12-15 days, followed by malolactic fermentation. The wine then ages for 12 months in French oak barrels, a combination of new and used. After blending, the wine spends a year in the cellar before release. Grapes are sourced from younger vines on the Kir-Yianni Estate and from local growers within the PDO Naoussa zone. The 2021 harvest involved cooling the grapes and rigorous selection.
