WINE MAKING PROCESS
The winemaking process for the Kloof Street Chenin Blanc begins with chilled, whole-bunch pressed grapes, with the juice settled overnight. Fermentation is carried out using indigenous yeasts, with 85% of the wine fermented in tank and 15% in older French oak barrels. Minimal sulfur dioxide is added throughout the process. Following fermentation, the wine is aged for approximately 7 months. The vineyards are sustainably farmed using dry land, bush vine cultivation methods.
