ABOUT THIS WINE
The Kolonia 52 Controlled Chaos 2023 is a red wine from the Balaton region of Hungary, produced by Kolonia 52. Founded by Annamária Török and Attila Francisti, the winery embraces a philosophy of 'controlled chaos' in its winemaking. This unique approach is exemplified by the blend of red and white grape varieties, including Pinot Noir and Furmint, and sometimes other unknown varieties from old bush vines. The vineyards are situated on volcanic basalt with limestone layers, contributing to the wine's distinct character. The winemaking process emphasizes minimal intervention, allowing for a natural expression of the grapes and terroir.

WINE MAKING PROCESS
The Kolonia 52 Controlled Chaos 2023 is produced using a philosophy of minimal intervention. Grapes are harvested early to preserve freshness. Pinot Noir is destemmed and fermented on skins for 7 days in an open vat, then aged in a 600L barrel. Cabernet Sauvignon is fermented whole-bunch. Other varieties are aged in 300L amphora. Fermentation is natural, and the winemaking process relies on gravity for racking and bottling, with no pump used. Blending occurs two days before bottling, and no additions, including sulfur dioxide, are made. The wine is neither filtered nor fined.
