ABOUT THIS WINE
Adega Entre os Ríos is a family-run estate located in the Barbanza e Iria region of Galicia, Spain, managed by winemaker José Crusat. Situated just three kilometers from the Atlantic Ocean, the vineyards benefit from a strong maritime influence and unique soils of decomposed granite and iron schist. The name 'Komokabras' is a playful Galician nod to Crusat's rebellious, unconventional approach to winemaking, rejecting industrial methods in favor of artisanal, low-intervention viticulture. Sourced from old pergola-trained vines, this wine represents a distinctive expression of Albariño outside the mainstream appellations.

WINE MAKING PROCESS
The winemaking process for this Albariño is highly distinctive, utilizing a 50/50 blend of two separate stainless steel tanks. Grapes are hand-harvested and undergo cold maceration before gentle pressing. Fermentation is carried out using wild, indigenous yeasts. The first tank undergoes full malolactic fermentation and is aged on its fine lees with periodic stirring (bâtonnage) to build texture and complexity. The second tank is immediately racked off its lees and does not undergo malolactic fermentation, preserving its vibrant, fresh malic acidity. The two components are blended in early summer and aged in bottle for at least two months before release.
