WINE MAKING PROCESS
The Koomilya JC Block Shiraz 2019 was produced using spontaneous fermentation, with 17-20% whole bunches included and 14 days of skin contact. After settling in tank, the wine was transferred to French oak puncheons and one barrique, all of second and third use, for malolactic fermentation and maturation. This aging period lasted fifteen to eighteen months, with minimal new oak influence. The wine was bottled unfined and unfiltered on July 28, 2020. Production for the 2019 vintage was approximately 1980 bottles.
