WINE MAKING PROCESS
The winemaking process for Kopke Fine Ruby Port begins with hand-picked grapes that are destemmed and crushed. A careful maceration process is employed to extract color, tannins, and aromas. Fermentation occurs in stainless steel vats at controlled temperatures (28-30°C) until the desired sweetness level is achieved, at which point grape brandy is added to fortify the wine. The resulting wine is a blend of different harvests, aged for a minimum of three years in a combination of stainless steel tanks and wooden vats.
